Prepare the Bacon
Lay the thick-cut bacon strips on a baking sheet lined with parchment paper. In a small bowl, mix together the black pepper, garlic powder, smoked paprika, and sea salt. Sprinkle this mixture evenly over both sides of the bacon strips. Drizzle the maple syrup over the bacon.

Soak the Wood Chips
In a bowl, soak the pecan wood chips in water for at least 30 minutes before smoking.

Preheat your smoker to 225°F (107°C).
