Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

Heat the Oil
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add the fries in batches to the hot oil. Fry until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels.

Season the Fries
While fries are still hot, season with salt and black pepper to taste.

Add Parmesan and Truffle Oil
Toss the hot fries with grated Parmesan cheese and drizzle with truffle oil to taste.
