Prepare the Chicken
Preheat the grill to medium-high heat. Season the chicken breasts with salt and pepper on both sides. Grill the chicken for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C).

Cook the Bacon
In a skillet, cook the bacon slices over medium heat until crispy. Remove and place on paper towels to drain excess grease.

Toast the Buns
Lightly toast the brioche buns on the grill or in a toaster until golden brown.

Assemble the Club
On the bottom half of each brioche bun, layer the grilled chicken, Canadian bacon, smoked Gouda cheese, crispy bacon, spring mix, and slices of tomato. Spread house aioli on the top half of the brioche bun and place it on top to close the sandwich.

Serve
Cut the grilled chicken club in half and serve with your favorite side.
