    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick, to resemble traditional French fries.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch and results in crispier fries.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry using a clean kitchen towel or paper towels to remove excess moisture.

    Heat the Oil

    In a large, deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the correct temperature.

    Fry the Potatoes

    Carefully add the dried potato strips to the hot oil in batches. Fry for about 4-5 minutes or until they are golden brown and crispy.

    Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. Season with salt and pepper to taste.
