Preparation Steps for Deviled On The Bayou

    Prepare the Deviled Eggs

    Place the eggs in a pot and cover them with water. Bring to a boil and then cover, removing from heat. Let sit for 12 minutes. After 12 minutes, transfer the eggs to an ice bath to cool.

    Make the Filling

    Once the eggs are cool, peel them and cut in half lengthwise. Remove the yolks and place them in a bowl. Mash the yolks and mix in tasso ham, mayonnaise, Dijon mustard, hot sauce, salt, and black pepper until smooth.

    Fill the Egg Whites

    Spoon or pipe the tasso mixture back into the egg whites and set aside.

    Prepare the Fried Shrimp

    In one bowl, place flour. In another bowl, place the beaten egg. In a third bowl, combine cornmeal and cayenne pepper. Dip each shrimp in flour, then egg, and finally coat with the cornmeal mixture.

    Fry the Shrimp

    Heat vegetable oil in a deep skillet over medium-high heat. Fry the shrimp in batches until golden brown and cooked through, about 3-4 minutes. Drain on paper towels.

    Make the Sriracha Aioli

    In a small bowl, mix sriracha sauce and lemon juice until well combined.

    Assemble the Dish

    Top each deviled egg with a piece of fried shrimp and drizzle with sriracha aioli. Garnish with chopped chives.
