    Prepare the Grits

    In a saucepan, bring water to a boil. Add salt and gradually stir in the grits. Reduce heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally until thickened. Stir in butter and season with salt and pepper to taste. Pour into a greased dish and let cool.

    Cook the Asparagus

    While the grits are cooling, preheat a grill or grill pan over medium-high heat. Toss asparagus with olive oil, salt, and pepper. Grill for about 5-7 minutes until tender and slightly charred. Set aside.

    Grill the Fish

    Preheat the grill to medium-high heat. Brush the fish fillets with olive oil and season with salt and pepper. Grill for about 4-5 minutes per side, or until the fish is cooked through and flakes easily with a fork. Remove from heat and keep warm.

    Make the Bayou Shrimp Topping

    In a skillet over medium heat, add olive oil and garlic. Sauté for about 1 minute until fragrant. Add shrimp and Cajun seasoning. Cook until shrimp are pink and opaque, about 5-7 minutes. Stir in lemon juice and remove from heat.

    Serve

    Cut the cooled grits into squares or rounds and grill them for about 2-3 minutes on each side until grill marks appear. Plate the grilled grit cakes topped with the grilled fish and Bayou shrimp topping. Serve with grilled asparagus on the side.
