Peel the bananas and cut them in half lengthwise. Then, cut each half into smaller pieces if desired.

Prepare the Bananas

In a small bowl, mix together brown sugar and ground cinnamon. Sprinkle this mixture over the banana pieces.

Make the Filling

Take an eggroll wrapper and place a banana piece at one corner. Fold the corner over the banana, then fold in the sides and roll tightly. Use a bit of water to seal the edge.

Wrap the Eggrolls

In a deep skillet, heat the vegetable oil over medium heat. Once hot, carefully add the eggrolls (in batches) and fry until golden brown and crispy, about 2-3 minutes per side.

Fry the Eggrolls

Remove the eggrolls from the oil and let them drain on paper towels. Serve warm with Foster Sauce.
