    Prepare glass

    Chill a highball glass or Collins glass by filling it with ice and cold water while you prepare the cocktail, or place it in the freezer for a few minutes. When ready, discard the water if used and fill the glass about three-quarters full with fresh ice cubes.

    Build base

    In a cocktail shaker (no need to shake the sparkling wine) or a mixing glass, add 1.5 oz vodka, 0.75 oz peach schnapps, and 3 oz fresh orange juice. Add a few ice cubes to the shaker and stir gently for about 10 seconds to chill and slightly dilute.

    Pour and top

    Strain the chilled mixture into the prepared highball glass over the fresh ice. Slowly pour 2 oz chilled Champagne (or dry sparkling wine) over the back of a spoon or directly into the glass to preserve carbonation.

    Add grenadine

    Carefully drizzle 0.25 oz grenadine down the inside edge of the glass. The grenadine will sink and create a sunrise gradient from red at the bottom to orange at the top.

    Garnish and finish

    Garnish with an orange wheel or twist on the rim and an optional maraschino cherry dropped into the drink. Serve immediately with a long cocktail spoon or straw so the drinker can gently stir if they prefer a uniform flavor.

    Notes: Use fresh-squeezed orange juice for best flavor. If you prefer a sweeter, fruitier profile, increase the peach schnapps to 1 oz. For a lighter lower-alcohol version, reduce the vodka to 1 oz and increase Champagne to 3 oz.
