Proof yeast
In a small bowl, combine the warm water and active dry yeast. Stir gently and let sit 5–8 minutes until foamy. If no foam appears, the yeast may be inactive; start over with fresh yeast.

Make dough
In a medium bowl, whisk together the all-purpose flour and salt. Make a well in the center, add the foamy yeast mixture and olive oil. Mix with a fork or wooden spoon until a shaggy dough forms.

Knead
Turn the dough onto a lightly floured surface and knead 6–8 minutes until smooth and slightly elastic. If dough is sticky, sprinkle with small additional amounts of flour.

Preheat oven
Place a pizza stone or inverted heavy baking sheet on the middle rack. Preheat the oven to 500°F (260°C) for at least 30 minutes so the stone is thoroughly heated.

Season sauce
In a small bowl, mix the tomato sauce with minced garlic, dried oregano, crushed red pepper, 1/8 tsp salt, and a pinch of black pepper. Taste and adjust seasoning. Spread about 1/2 cup of this sauce evenly over the stretched dough, leaving the rim exposed.

Cook bacon
Preheat a skillet over medium heat. Add the bacon slices and cook 4–6 minutes per side until crisp but not burnt. Transfer to paper towels to drain, then chop or tear into 1–2" pieces.

Prepare pineapple & onion
If using fresh pineapple, core and cut into 1/2–3/4" chunks. If canned, drain well and pat dry. Thinly slice the red onion into half-moons and separate into rings.

Assemble pizza
Sprinkle 1 to 1 1/2 cups shredded mozzarella evenly over the sauced dough. Distribute the cooked bacon pieces, pineapple chunks, and sliced red onion evenly on top of the cheese. Sprinkle 2 tbsp grated Parmesan (optional) and 1/8 tsp black pepper over everything.

Bake
Slide the pizza onto the preheated stone or baking sheet. Bake at 500°F (260°C) for 8–12 minutes, rotating once halfway through, until the crust is golden and the cheese is bubbly and starting to brown.
