Prepare the cheese
Pat the cheese dry with paper towels. Cut the block into 1-inch cubes or 1 x 1 x 2-inch batons depending on preferred bite size. Keep cubes uniform so they cook evenly (about 24–30 pieces from 1 lb).

Make the batter
In a medium bowl, whisk together the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. In a separate bowl, lightly beat the egg and then whisk in the cold sparkling water until smooth. Combine the wet mixture into the dry ingredients and whisk just until combined; a few small lumps are fine. Batter should be thick enough to coat—adjust by adding 1–2 tbs flour if too thin or a splash more water if too thick.

Set up dredging station
Place the panko breadcrumbs in a shallow bowl or plate. Put the batter in a deep, narrow container for easier dipping. Arrange the cut cheese on a tray near the dredging station.

Coat the cheese
One piece at a time: lightly dust the cheese cube with a pinch of flour (optional, helps batter stick), dip into the batter letting excess drip off, then press into the panko to fully coat. For a thicker crust, repeat: dip back into batter and press again into panko. Transfer coated pieces to a wire rack or tray and rest 5 minutes so the coating adheres.

Heat the oil
Pour vegetable oil into a medium skillet or deep pot to a depth of about 1 to 1 1/2 inches (enough to shallow-fry/half-deep-fry). Heat over medium-high to 350°F (175°C). If you don't have a thermometer, test by dropping a small breadcrumb into the oil: it should sizzle vigorously and brown in about 45–60 seconds.

Fry the bites
Work in batches (do not overcrowd). Gently lower 6–8 coated cheese bites into the hot oil and fry until golden brown and crisp, about 1.5–2.5 minutes per side. Use a slotted spoon or spider to turn pieces for even coloring. Total fry time per batch is typically 3–5 minutes. If cheese begins to leak early, reduce oil temperature slightly.

Garnish
Transfer to a serving platter and sprinkle with chopped cilantro or parsley if using. Serve immediately with the pink sauce.
Pink Sauce (Dip)

Combine the mayonnaise, ketchup, and sour cream (or Greek yogurt) in a small bowl. Whisk until smooth and uniformly pink.

Add hot sauce, lime juice, smoked paprika, garlic powder, and salt. Taste and adjust: add more hot sauce for heat, lime for brightness, or a teaspoon of water to thin to desired dipping consistency.

Chill for at least 15 minutes (or up to 1 hour) to let flavors meld. Stir again before serving alongside the hot cheese bites.
