Honey-Ginger Syrup (makes ~8 oz)
Method
Honey-Ginger Syrup (advance or same day)

Combine 1 cup honey and 1 cup water in a small saucepan. Add the sliced fresh ginger.

Bring mixture to a gentle simmer over medium heat, stirring to dissolve the honey. Do not boil vigorously — a simmer for 5 minutes is sufficient to extract ginger flavor.

Remove from heat and let the syrup steep with the ginger for 20–30 minutes for stronger flavor (shorter steep for milder ginger).

Strain the syrup through a fine-mesh sieve into a clean container, pressing lightly on the ginger to extract liquid. Discard solids. Cool to room temperature, then refrigerate. Syrup keeps 2 weeks refrigerated.

Chill glass
If desired, chill a rocks or coupe glass in the freezer for 5–10 minutes, or fill with ice to cool while you mix.

Fill a cocktail shaker with 1 cup of ice.

Add 2 oz blanco tequila, 0.75 oz triple sec, 0.75 oz fresh lemon juice, and 0.75 oz honey-ginger syrup to the shaker.

Shake vigorously for 12–15 seconds until the shaker is well chilled and slightly frosted.

Prepare your serving glass: discard any chilling ice and fill the glass with crushed ice or fresh ice cubes (about 1 cup).

Strain the shaken cocktail over the ice. Use a fine strain if you want a cleaner drink without small ice shards.

Serve immediately with a short stirring straw so the drink can be gently mixed as the ice melts.
