Prepare glass
Chill a highball or Collins glass by filling it with ice water while assembling the cocktail ingredients. After a minute, discard the ice water.

Build and shake
In a cocktail shaker, add 2 oz vodka, 2 oz peach nectar or purée, 0.5 oz fresh lemon juice, 0.5 oz simple syrup, and a handful of ice (about 1/2 cup). If using bitters, add 2 dashes. Secure the lid and shake vigorously for 10–15 seconds until well chilled and slightly frothy (this helps incorporate the peach purée if used).

Strain and top
Discard the chilling ice water from the glass. Fill the glass about 2/3 full with fresh ice (about 1/2 to 1 cup). Strain the shaken mixture into the prepared glass. Top with 2 oz club soda or sparkling water and gently stir once or twice to combine.

If you prefer a lighter ready-to-drink style (mimicking the canned High Noon), reduce vodka to 1.5 oz and increase club soda to 3 oz for a more refreshing, lower-strength version.
