Prepare cheese
Drain and pat the white cheese dry with paper towels. If using a crumbly queso fresco, press it into a compact log or block on a cutting board to make uniform bite-sized pieces. Cut the cheese into 1-inch (2.5 cm) cubes or use a small scoop to form rounds. Place cut pieces on a tray and refrigerate for 10–15 minutes to firm up (this helps them hold shape while frying).

Make batter
In a medium bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. In a separate small bowl, beat the eggs and combine with the cold water. Add the wet mixture to the dry ingredients and stir until just combined; the batter should be thick but pourable (add a tablespoon of cold water if too thick).

Prepare dredge
Place the panko breadcrumbs (if using) in a shallow dish. Set the batter in a separate shallow bowl. Arrange the cheese cubes on a plate ready for coating.

Coat the cheese
Working in batches, dip each chilled cheese cube into the batter, letting any excess drip off, then roll it in panko breadcrumbs to fully coat. For a thicker crust, repeat: dip the panko-coated piece back into the batter and again in panko. Place the coated bites on a parchment-lined tray and refrigerate for 10 minutes to help the coating set.

Heat oil
Pour vegetable oil into a deep heavy-bottomed pan or deep-fryer to a depth of about 2–3 inches (5–7.5 cm). Heat the oil to 350°F (175°C). If you don't have a thermometer, test by dropping a small bit of batter — it should sizzle and rise slowly.

Fry the bites
Carefully lower 6–8 coated pieces (do not overcrowd) into the hot oil using a slotted spoon. Fry for 1.5–2.5 minutes, turning gently, until the exterior is golden brown and crisp. Remove with a slotted spoon and transfer to a paper towel–lined baking sheet. Fry remaining bites in batches, maintaining oil temperature between 330–360°F (165–182°C).

Drain and keep warm
After frying, place the baking sheet in a warm oven (about 200°F / 95°C) to keep bites crisp if serving in multiple batches. Sprinkle with a pinch of salt and chopped fresh parsley, if desired.
Pink Sauce

Combine mayonnaise, ketchup, sour cream (or crema), hot sauce, lime juice, paprika, salt, and black pepper in a small bowl. Whisk until smooth and uniform in color. Taste and adjust seasoning: add more lime for tang, hot sauce for heat, or a teaspoon of honey if you prefer sweeter sauce.

Transfer sauce to a serving bowl. The sauce can be served immediately or chilled for 15–30 minutes to let flavors meld. If chilled, bring to room temperature for 10 minutes before serving for best texture.
