Cooking Instructions

  1. 1

    Prepare the Chicken

Preheat the oven to 375°F (190°C). Rinse the whole chicken under cold water and pat dry with paper towels.

  2. 2

    Season the Chicken

Rub the olive oil all over the chicken. Season with salt, black pepper, garlic powder, onion powder, and fresh rosemary. Squeeze the lemon juice over the chicken and place the lemon halves inside the cavity.

  3. 3

    Roast the Chicken

Place the chicken breast-side up in a roasting pan. Roast in the preheated oven for about 1 hour and 20 minutes, or until the internal temperature reaches 165°F (75°C). Baste the chicken with the juices every 30 minutes.

  4. 4

    Make the Gravy

Remove the chicken from the oven and let it rest for 15 minutes. Pour the drippings from the roasting pan into a saucepan. Add chicken broth and heat over medium heat. In a small bowl, mix cornstarch and water to form a slurry, then gradually add it to the saucepan, stirring until the gravy thickens.

  5. 5

    Serve

Carve the chicken and serve with the gravy.
