Sauté the Vegetables

In a large pot, heat olive oil over medium heat. Add chopped onions, bell peppers, and minced garlic. Sauté for about 5 minutes until the vegetables are softened.

Brown the Meats

Add the cubed alligator meat and sliced andouille sausage to the pot. Cook for an additional 5-7 minutes until the meats are browned.

Add Tomato Sauce and Spices

Stir in the Creole tomato sauce, Cajun seasoning, salt, and black pepper. Mix well to combine all the ingredients.

Add Rice and Broth

Add the long-grain rice and chicken broth to the pot. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.

Garnish and Serve

Once cooked, fluff the jambalaya with a fork. Serve hot, garnished with sliced green onions.
