Brewing Instructions

    Mashing

    In a large brew kettle, heat 5 gallons of water to about 165°F (74°C). Add the Pale Malt, Chocolate Malt, and Crystal Malt, and hold the temperature at around 150°F (65°C) for 60 minutes, stirring occasionally.

    Lautering

    After mashing, raise the temperature to 170°F (77°C) and begin the lautering process by draining the liquid (wort) from the grains. Rinse the grains with hot water to extract maximum sugars.

    Boiling

    Bring the wort to a boil and add the bittering hops. Boil for 60 minutes, adding the aroma hops and cocoa powder with 15 minutes remaining in the boil.

    Cooling

    After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

    Fermentation

    Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast. Seal the vessel with an airlock and let it ferment at room temperature for about 1 to 2 weeks or until fermentation is complete.

    Bottling

    Once fermentation is complete, siphon the beer into sanitized bottles, adding priming sugar if desired for carbonation. Cap the bottles and let them condition for another 1 to 2 weeks.
