Prepare the Beef Tongue
In a large pot, add the beef tongue, cover with water, and bring to a boil. Skim any foam that rises to the top.

Season the Tongue
Add salt, black pepper, garlic cloves, onion, and bay leaves to the pot. Reduce heat and simmer for about 2.5 to 3 hours, or until the tongue is tender.

Cool and Peel
Once cooked, remove the tongue from the pot and let it cool slightly. Peel off the skin while the tongue is still warm.

Shred the Tongue
Cut the tongue into small pieces or shred it using two forks.

Warm the Tortillas
In a skillet, lightly grill the flour tortillas until they are warm and pliable.

Assemble the Tacos
On each tortilla, place a portion of the shredded beef tongue, followed by lettuce, pico de gallo, and a dollop of sour cream.

Serve
Fold the tortillas over the filling and serve immediately with additional pico de gallo and sour cream on the side.
