Prepare the Potatoes
Peel and dice the medium potatoes into small cubes. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes, season with half the salt and pepper, and cook until golden and tender, about 10-15 minutes. Remove the potatoes from the skillet and set aside.

Caramelize the Onions
In the same skillet, add another tablespoon of olive oil and the sliced onion. Cook on low heat, stirring occasionally, until the onions are caramelized, about 15-20 minutes. Once caramelized, remove and set aside.

Cook the Sirloin Tips
In the same skillet, add the remaining tablespoon of olive oil. Season the sirloin tips with the remaining salt, pepper, and paprika. Cook over medium-high heat until browned and cooked to your desired level of doneness, about 4-5 minutes for medium rare.

Cook the Eggs
In a separate non-stick skillet, cook the sunny-side-up eggs as desired, about 3-4 minutes until the whites are set but the yolks are still runny.

Serve
Divide the steak hash among plates, top each serving with a sunny-side-up egg, and sprinkle with fresh parsley if using.
