Make the Old Bay Remoulade
In a bowl, combine mayonnaise, Dijon mustard, Old Bay seasoning, lemon juice, hot sauce, garlic powder, salt, and pepper. Mix well and refrigerate until ready to use.

Prepare the Soft Shell Crabs
Clean the soft shell crabs by removing the gills and any impurities. Rinse under cold water and pat dry.

Fry the Soft Shell Crabs
Heat oil in a frying pan over medium heat. Dredge each crab in flour, shaking off excess. Fry crabs for about 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

Assemble the Sandwich
Toast the brioche buns lightly. Spread a generous amount of Old Bay remoulade on the bottom half of each bun. Add lettuce, followed by fried soft shell crab, and slices of tomato. Top with the other half of the bun.

Serve the soft shell crab sandwiches with your choice of house side and enjoy!
