Directions

  1. 1

    Prepare the Jalapeños

Preheat your oven to 375°F (190°C). Cut the jalapeños in half lengthwise and remove the seeds and membranes for less heat.

  2. 2

    Cook the Shrimp

In a skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute. Add the shrimp and cook until they turn pink, about 3-4 minutes. Remove from heat and let cool slightly.

  3. 3

    Make the Filling

In a mixing bowl, combine cooked shrimp, cream cheese, cheddar cheese, chopped green onions, cilantro, lemon juice, salt, and black pepper. Mix until well combined.

  4. 4

    Stuff the Jalapeños

Spoon the shrimp mixture into each jalapeño half, pressing down gently to pack it in.

  5. 5

    Bake

Place the stuffed jalapeños on a baking sheet and bake in the preheated oven for about 20-25 minutes, or until the jalapeños are tender and the filling is bubbly and golden.

  6. 6

    Serve

Remove from oven and allow to cool slightly before serving. Enjoy your shrimp stuffed jalapeños!
