    Prepare the Shrimp

    In a large pot, bring water to a boil. Add a pinch of salt. Add the shrimp and poach for 2-3 minutes until they turn pink and opaque. Remove from heat and drain.

    Hard Boil the Eggs

    In a separate pot, place the eggs and cover with water. Bring to a boil, then cover and remove from heat. Let sit for 10-12 minutes. Cool the eggs in cold water, peel, and slice.

    Blanch the Green Beans

    In a small pot, bring water to a boil. Add the green beans and blanch for 2-3 minutes until tender-crisp. Drain and immediately place in ice water to stop cooking.

    Assemble the Salad

    In a large serving bowl, combine the baby spinach, poached shrimp, sliced Kalamata olives, blanched green beans, and halved baby tomatoes. Gently toss to combine.

    Dress the Salad

    Drizzle the Thousand Island dressing over the salad and toss gently to coat all ingredients evenly. Season with salt and black pepper to taste.

    Top the salad with sliced hard-boiled eggs. Serve immediately.
