    Prepare the Mashed Potatoes

    Peel and chop the potatoes. Boil in salted water until tender, then mash with butter, salt, and pepper to taste.

    Prepare the Asparagus

    Trim the ends of the asparagus and blanch in boiling water for 2-3 minutes. Drain and set aside.

    Make the Lemon Herb Oil

    In a small bowl, whisk together olive oil, lemon zest, lemon juice, chopped parsley, minced garlic, salt, and black pepper.

Cooking the Ahi Tuna

    Sear the Tuna

    Heat a skillet over high heat. Season the ahi tuna steaks with salt and black pepper. Add a little oil to the skillet and sear the tuna for 1-2 minutes on each side for rare. Remove from heat.
