    Marinate the Scallops

    In a large bowl, combine bay scallops and lime juice. Make sure the scallops are fully submerged. Cover and refrigerate for 30 minutes to 1 hour until scallops turn opaque.

    Combine Ingredients

    After marinating, drain some of the lime juice if desired. Add diced tomato, chopped red onion, diced watermelon, chopped jalapenos, and diced avocado to the scallops. Mix gently to combine.

    Season the Ceviche

    Sprinkle ancho chili powder and salt over the mixture. Stir gently to ensure even seasoning.

    Serve

    Spoon the ceviche into bowls and serve immediately with tortilla chips on the side.
