Sauté the Vegetables
Heat olive oil in a large skillet over medium heat. Add the onion and garlic, cooking until the onion is translucent, about 3-4 minutes. Add the zucchini, eggplant, and red bell pepper. Sauté for another 8-10 minutes until the vegetables are tender.

Season the Ratatouille
Stir in the chopped basil, salt, and black pepper. Cook for an additional 2 minutes, allowing the flavors to meld. Remove from heat and let cool slightly.

Prepare the Crostini
While the ratatouille cools, preheat your oven to 400°F (200°C). Slice a baguette into ½-inch thick slices. Place the slices on a baking sheet and brush with olive oil. Bake for 5-7 minutes until golden brown.

Top each toasted baguette slice with a generous spoonful of the ratatouille mixture. Optionally, garnish with additional fresh basil before serving.
