    Season the Steaks

    Remove the New York strip steaks from the refrigerator and let them sit at room temperature for about 30 minutes. Season both sides generously with salt and black pepper.

    Preheat the Pan

    Heat a large skillet or grill pan over medium-high heat. Add the olive oil and let it heat until shimmering.

    Sear the Steaks

    Add the seasoned steaks to the hot pan. Sear for about 4-5 minutes on each side for medium-rare, adjusting the time if you prefer a different doneness.

    Add Aromatics

    In the last minute of cooking, add the garlic cloves and rosemary to the pan to infuse flavor. Spoon the pan juices over the steaks while they cook.

    Rest the Steaks

    Once cooked to your liking, remove the steaks from the pan and let them rest on a cutting board for about 5-10 minutes before slicing.
