Prepare the Lamb
Preheat your oven to 375°F (190°C). In a small bowl, mix together minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and black pepper to create a herb paste.

Season the Lamb
Rub the herb paste all over the leg of lamb, ensuring it is evenly coated. Place the lamb in a roasting pan.

Roast the Lamb
Roast the lamb in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare. Baste occasionally with the juices.

Rest and Serve
Once the lamb is cooked, remove it from the oven and let it rest for 15 minutes before carving. Serve with au jus and mint jelly on the side.
