    Prepare the Butternut Squash-Maple Butter

    Peel and cube the butternut squash. Boil it in a pot of salted water until tender, about 15 minutes. Drain and mash the squash, then mix in the maple syrup and 2 tablespoons of butter. Set aside.

    Cook the Polenta Cake

    In a saucepan, bring the vegetable broth to a boil. Gradually stir in the polenta, reduce the heat, and cook, stirring frequently, until thickened, about 5-7 minutes. Pour into a greased baking dish and let it cool before cutting into cakes.

    Sear the Halibut

    Season the halibut fillets with salt and black pepper. In a skillet, heat olive oil over medium-high heat. Sear the halibut for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from heat.

    Sauté the Spinach

    In the same skillet, add the remaining 2 tablespoons of butter and sauté the spinach until wilted, about 3-4 minutes. Season with salt and pepper.

    Assemble the Dish

    On a plate, place a polenta cake, top it with the sautéed spinach, and place the seared halibut on top. Drizzle the butternut squash-maple butter around the plate for added flavor.
