Pork Chop

    Prepare the Pork Chop

    Season the Berkshire pork chop with salt and black pepper. Drizzle with olive oil and let it marinate for at least 30 minutes.

    Grill the Pork Chop

    Preheat the grill to medium-high heat. Grill the pork chop for about 6-7 minutes on each side or until it reaches an internal temperature of 145°F (63°C). Remove and let rest.

    Make the Sauce

    In a saucepan, combine bourbon, chili powder, brown sugar, soy sauce, ketchup, and minced garlic. Bring to a simmer over medium heat and cook for 10 minutes, stirring occasionally until thickened.

Sweet Potato-Apple Salad

    Prepare the Salad

    In a pot, boil diced sweet potatoes until tender, about 10-15 minutes. Drain and let cool. In a bowl, mix sweet potatoes, apples, red onion, olive oil, cinnamon, salt, and pepper.

Asparagus

    Prepare the Asparagus

    Toss the trimmed asparagus with olive oil, salt, and pepper. Grill or roast at 400°F (200°C) for 10-15 minutes until tender.
