Fried Pickle Chips

Preparation

Prepare the Pickles
Drain the sliced pickles and pat them dry with paper towels to remove excess moisture.

Make the Batter
In a mixing bowl, combine flour, cornmeal, Cajun seasoning, baking powder, salt, and black pepper. Whisk the dry ingredients together until well mixed.

Combine Wet Ingredients
In a separate bowl, whisk the egg and buttermilk together until smooth.

Mix Wet and Dry Ingredients
Pour the wet mixture into the dry ingredients and stir until just combined. The batter should be thick.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Pickles
Dip each pickle slice into the batter, allowing excess to drip off, then carefully place them in the hot oil. Fry in batches until golden brown, about 2-3 minutes per side.

Drain the Fried Pickles
Remove the fried pickles and place them on a paper towel-lined plate to drain excess oil.

Prepare Sriracha Ranch
In a small bowl, mix together the ranch dressing and Sriracha until well combined.

Serve the fried pickle chips warm with the Sriracha ranch dipping sauce.
