Fried Chicken Oscar Directions

    Prepare the Chicken

    Preheat your oven to 375°F (190°C). Prepare three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs. Season the flour with salt and pepper.

    Coat the Chicken

    Dredge each chicken breast in the flour, shaking off excess, then dip in the egg, and finally coat with panko breadcrumbs. Make sure they are well coated.

    Fry the Chicken

    In a large skillet, heat olive oil over medium heat. Once hot, add the coated chicken breasts and fry until golden brown and cooked through, about 4-5 minutes per side. Transfer to a baking dish and keep warm in the oven.

    Prepare the Crab Imperial

    In a bowl, mix together crab meat, mayonnaise, Dijon mustard, and Old Bay seasoning. Gently fold to combine, being careful not to break the crab meat.

    Remove the chicken from the oven and top each breast with the crab imperial mixture. Return to the oven and bake for another 10 minutes.

    While the chicken is baking, steam the asparagus until tender, about 3-5 minutes. Season with salt and pepper.

    Peel and chop the potatoes, then boil them until fork-tender. Drain and return to the pot. Add butter, milk, salt, and pepper, and mash until creamy.
