Ingredients for Fish of the Day - Bronzino

Method

Directions to prepare Fish of the Day - Bronzino

  1. 1

    Prepare the Mashed Potatoes

In a large pot, boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.

  2. 2

    Mash the Potatoes

Add butter and milk to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.

  3. 3

    Cook the Asparagus

In a skillet, bring a small amount of water to a boil. Add the trimmed asparagus and cook for 3-5 minutes until tender-crisp. Drain and set aside.

  4. 4

    Prepare the Lemon Herb Oil

In a small bowl, whisk together olive oil, lemon juice, minced garlic, and fresh herbs. Set aside.

  5. 5

    Cook the Bronzino

Heat a non-stick skillet over medium-high heat. Season the Bronzino fillets with salt and black pepper. Add olive oil to the skillet and cook the fillets for about 3-4 minutes on each side until golden brown and cooked through.

  6. 6

    Plating

On each plate, serve a generous scoop of mashed potatoes, a portion of asparagus, and place the cooked Bronzino fillet on top. Drizzle with lemon herb oil before serving.
