    Prepare the Lemon Herb Oil

    In a small bowl, mix the olive oil, lemon juice, chopped fresh herbs, salt, and black pepper. Set aside.

    Cook the Root Vegetables

    Peel and chop the root vegetables into bite-sized pieces. Boil them in salted water until tender, about 15-20 minutes. Drain and set aside.

    Cook the Green Beans

    In a separate pot, bring water to a boil. Add the green beans and cook for about 5-7 minutes until tender-crisp. Drain and set aside.

    Prepare the Mashed Potatoes

    Boil the potatoes until tender, about 15-20 minutes. Drain and mash with butter, salt, and pepper to taste.

    Cook the Ahi Tuna

    Season the tuna steaks with salt and black pepper. Heat a skillet over medium-high heat and add a little olive oil. Sear the tuna for about 2-3 minutes on each side for medium-rare, adjusting cooking time to desired level of doneness.

    On each plate, serve a portion of mashed potatoes, root vegetables, and green beans. Place the seared tuna on top and drizzle with the lemon herb oil.
