    Prepare the Mashed Potatoes

    Peel and chop the potatoes into small chunks. Boil in salted water until tender, about 15-20 minutes. Drain and mash with butter, salt, and pepper to taste.

    Cook the Asparagus

    Trim the ends of the asparagus and steam or blanch in boiling water for 3-5 minutes until bright green and tender-crisp. Drain and set aside.

    Prepare the Lemon Herb Oil

    In a small bowl, combine olive oil, lemon juice, minced garlic, and chopped fresh herbs. Add salt and pepper to taste.

    Cook the Swordfish

    Heat a grill pan or skillet over medium-high heat. Season swordfish steaks with salt and pepper. Cook for 4-5 minutes on each side or until the fish is cooked through and flakes easily with a fork.

    On each plate, add a serving of mashed potatoes, a portion of asparagus, and top with the swordfish. Drizzle the lemon herb oil over the fish and vegetables.
