    Prepare the Aioli

    In a bowl, combine mayonnaise, Dijon mustard, and minced garlic. Mix well until creamy and set aside.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove from skillet and drain on paper towels.

    Assemble the Quesadilla

    On one half of each tortilla, layer pulled pork, crispy bacon, ham, shredded jack cheese, and cheddar cheese. Fold the tortilla over to cover the filling.

    Cook the Quesadilla

    Heat a wood oven or skillet over medium-high heat. Cook each quesadilla for about 3-4 minutes on each side, or until golden and the cheese is melted.

    Slice the quesadillas into wedges and serve warm with Dijon aioli and pickle relish on the side.
