    Prepare the Calamari

    Rinse the calamari under cold water and pat dry with paper towels. Cut the tubes into rings if they aren't already cut. Set aside.

    Make the Breading

    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika.

    Soak in Buttermilk

    Place the calamari in another bowl and pour the buttermilk over it. Let it soak for about 15 minutes.

    Heat the Oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Coat the Calamari

    Remove the calamari from the buttermilk and allow excess to drip off. Dredge the calamari in the flour mixture, ensuring they are well coated.

    Fry the Calamari

    Fry the calamari in batches, being careful not to overcrowd the pan. Cook for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

    Serve

    Serve the crispy calamari over a bed of arugula with lemon wedges and a side of marinara sauce for dipping.
