    Prepare the Ingredients

    Chop the celery, onion, and bell peppers into small pieces. Mince the garlic cloves.

    Sear the Chicken

    In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Season the chicken thighs with salt, black pepper, and Cajun spice. Add the chicken thighs to the skillet and sear for about 5-7 minutes on each side until golden brown. Remove the chicken and set aside.

    Cook the Vegetables

    In the same skillet, add the chopped celery, onions, bell peppers, and minced garlic. Sauté for about 5-7 minutes until the vegetables are softened.

    Combine and Simmer

    Return the chicken thighs to the skillet. Pour in the chicken broth and bring to a simmer. Cover the skillet and let it cook for about 20-25 minutes on low heat, until the chicken is cooked through and tender.

    Serve

    Remove from heat and serve the Creole Chicken hot, garnished with fresh herbs if desired.
