    Prepare the Hanger Steak

    Preheat the grill or a skillet over medium-high heat. Rub the hanger steak with olive oil, salt, and black pepper. Grill or sear the steak for about 5-7 minutes on each side for medium-rare, or until it reaches your desired doneness.

    Make the Potato Gratin

    Preheat the oven to 375°F (190°C). Thinly slice the potatoes and layer them in a greased baking dish. Pour heavy cream over the potatoes and sprinkle with cheddar cheese. Bake for 45-50 minutes until golden and bubbly.

    Prepare the Asparagus

    Trim the asparagus and steam or blanch until tender, about 3-5 minutes. Set aside.

    Make the Hollandaise Sauce

    In a heatproof bowl over simmering water, whisk together the egg yolks and lemon juice until thickened. Gradually whisk in melted butter until the sauce is creamy. Season with salt and pepper to taste.
