    Prepare the Corn Relish

    In a medium bowl, combine fresh corn kernels, diced red bell pepper, diced red onion, lemon juice, 1 tablespoon of Old Bay seasoning, salt, and black pepper. Mix well and set aside.

    Make the Old Bay Butter

    In a small saucepan, melt the unsalted butter over low heat. Stir in the remaining Old Bay seasoning and keep warm.

    Prepare the Crabs

    Rinse the Maryland softshell crabs under cold water and pat dry. Brush both sides with olive oil and season with salt and black pepper.

    Grill the Crabs

    Preheat the grill to medium-high heat. Grill the softshell crabs for about 3-4 minutes on each side, or until they are cooked through and have nice grill marks.

    Serve

    On a large serving platter, arrange the grilled crabs. Spoon the corn relish over the crabs and drizzle with Old Bay butter. Garnish with chopped parsley and serve immediately.
