    Caramelize the Onions

    In a medium skillet, melt 1 tablespoon of butter over medium heat. Add the diced onion and sauté until softened and golden brown, about 8-10 minutes. Remove from the skillet and set aside.

    Cook the Ham

    In the same skillet, add the diced country ham and cook for about 3-4 minutes until heated through. Remove from heat and set aside with the onions.

    Prepare the Omelet

    In a bowl, whisk together the eggs, salt, and black pepper until well combined. In the same skillet, melt the remaining tablespoon of butter over medium heat, ensuring it coats the skillet.

    Cook the Eggs

    Pour the egg mixture into the skillet. Let it cook undisturbed for about 2 minutes, until the edges begin to set.

    Add Fillings

    Once the edges are set, use a spatula to gently lift the edges of the omelet, tilting the skillet to allow uncooked egg to flow to the edges. After about 2 more minutes, when the top is still slightly runny, sprinkle the caramelized onions, cooked ham, and cheddar cheese over one half of the omelet.

    Finish the Omelet

    Fold the other half of the omelet over the fillings. Cook for another minute to allow the cheese to melt. Slide the omelet onto a plate and serve immediately.
