    Make the Dough

    In a medium saucepan, combine water, butter, and granulated sugar. Bring to a boil over medium heat. Remove from heat and stir in flour, baking powder, and salt until the mixture forms a ball. Allow the dough to cool slightly before adding eggs one at a time, mixing well after each addition. Stir in vanilla extract.

    Prepare the Oil

    In a deep skillet or pot, heat oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of dough in; it should sizzle and rise to the surface.

    Fry the Churros

    Transfer the dough to a pastry bag fitted with a star tip. Squeeze out strips of dough (about 4 inches long) into the hot oil, frying a few at a time until golden brown, about 2-3 minutes on each side. Remove and drain on paper towels.

    Coat with Cinnamon Sugar

    In a shallow dish, combine granulated sugar and cinnamon. Roll the drained churros in the cinnamon sugar mixture while they are still warm.

    Serve the churros warm with vanilla ice cream and chocolate sauce for dipping.
