Chicken Parmesan Sandwich
Method
Preparation Instructions
- 1
Prepare the Chicken
Preheat your oven to 400°F (200°C). Season the chicken breasts with salt and black pepper. Set up a breading station with three bowls: one with flour, one with beaten egg, and one with panko breadcrumbs.
- 2
Bread the Chicken
Dredge each chicken breast in flour, shaking off the excess. Dip into the egg, and finally coat with panko breadcrumbs, pressing down to adhere.
- 3
Cook the Chicken
Heat olive oil in a skillet over medium heat. Fry the breaded chicken for about 4-5 minutes on each side until golden brown. Transfer to a baking sheet.
- 4
Add Sauce and Cheese
Spoon marinara sauce over each chicken breast and sprinkle with mozzarella and Parmesan cheese. Bake in the oven for 10-15 minutes until the cheese is melted and bubbly.
- 5
Make Pesto Aioli
In a small bowl, mix together mayonnaise and pesto until well combined.
- 6
Assemble the Sandwich
Slice the Kaiser rolls in half and spread the pesto aioli on the bottom half. Place the baked chicken with cheese on top and cover with the roll's top half.
