    Prepare the Pork Shank

    Rub the pork shank with salt, black pepper, minced garlic, and thyme. Let it marinate in the refrigerator for at least 4 hours or overnight.

    Confit the Pork

    In a large pot, heat the olive oil over low heat. Add the marinated pork shank and cook slowly for about 4-5 hours, until the meat is tender and falling off the bone.

    Crisp the Pork

    Once cooked, remove the pork shank from the oil and let it cool slightly. Heat a skillet over high heat and sear the pork shank until crispy on all sides.
