Marinate the Steak
In a large bowl, combine tequila, lime juice, olive oil, minced garlic, cumin, salt, and black pepper. Add the skirt steak, ensuring it's fully coated. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.

Prepare the Vinaigrette
In a small bowl, mix chopped parsley, cilantro, red wine vinegar, and a pinch of salt. Set aside.

Cook the Fries
Preheat the oven to 425°F (220°C). Spread the cut potatoes onto a baking sheet and toss with olive oil, salt, and black pepper. Bake for 30-35 minutes, flipping halfway through, until golden and crispy.
