Chicken Preparation

    Season the Chicken

    Rub the Cajun seasoning, olive oil, salt, and black pepper all over the chicken halves.

    Smoke the Chicken

    Preheat the smoker to 225°F (107°C). Place the seasoned chicken halves in the smoker and smoke for about 3-4 hours, or until the internal temperature reaches 165°F (74°C).

Collard Greens Preparation

    Sauté the Vegetables

    In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until softened.

    Cook the Collard Greens

    Add the chopped collard greens and chicken broth to the pot. Season with salt and black pepper. Cover and simmer for about 30-40 minutes until tender.

Jalapeno Grits Preparation

    Cook the Grits

    In a pot, bring water to a boil. Stir in grits and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally.

    Add Jalapeno and Cheese

    Stir in milk, diced jalapeno, cheddar cheese, butter, and salt. Cook for an additional 5-10 minutes until creamy.

White Gravy Preparation

    In a saucepan, melt butter over medium heat. Whisk in flour and cook until golden brown.

    Add Milk and Season

    Gradually whisk in milk, stirring continuously until the gravy thickens. Season with salt and black pepper.
