Prepare the Pork Shank
Preheat oven to 300°F (150°C). Season the pork shanks with salt, black pepper, garlic powder, and onion powder. Place them in a large pot and cover with vegetable oil. Cook on low heat for 4 hours until tender.

Make the Buffalo Demi
Once the pork is tender, remove the shanks and strain the oil. In a saucepan, combine the strained oil, buffalo sauce, and beef stock. Simmer for 15 minutes until slightly thickened.

Prepare Mashed Potatoes
Peel and chop the potatoes. Boil in salted water until tender, about 15 minutes. Drain and return to pot. Add butter, heavy cream, salt, and mash until smooth.

Fry the Tobacco Onions
Slice the onions thinly. Dredge in flour and soak in buttermilk for 10 minutes. Heat oil in a pan and fry the onions until crispy. Drain on paper towels.

Crisp the Pork Shank
Increase the oven temperature to 400°F (200°C). Place the pork shanks on a baking sheet and roast for 20-25 minutes until the skin is crispy.
