Prepare the Brisket
Preheat your smoker to 225°F (107°C). In a bowl, mix together smoked paprika, garlic powder, onion powder, black pepper, and salt. Rub the seasoning all over the brisket. Smoke the brisket for about 10-12 hours, or until it reaches an internal temperature of 195°F (90°C). Let it rest for at least 30 minutes before slicing.

Make the Slaw
In a bowl, combine the sliced cucumber and jalapeño. In another bowl, mix together mayonnaise, buttermilk, and ranch seasoning. Pour the dressing over the cucumber and jalapeño mixture, and toss to coat. Refrigerate until ready to use.

Assemble the Sandwich
Toast the hoagie rolls lightly. Layer the sliced brisket on the bottom half of each roll, top with cucumber-jalapeno slaw, and add pickle slices. Place the top half of the roll on and serve with your choice of house side.
