    Prepare the Brisket

    In a large pot, heat olive oil over medium heat. Season the brisket with salt and black pepper, then sear it in the pot until browned on all sides, about 5-7 minutes. Remove brisket and set aside.

    Sauté the Aromatics

    In the same pot, add diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

    Braise the Brisket

    Return the brisket to the pot and add beef broth. Bring to a simmer, cover, and reduce heat to low. Cook for 3-4 hours until the brisket is tender and easily pulled apart.

    Prepare the Fries

    While the brisket is braising, prepare the large cut fries according to package instructions or homemade. Keep warm.

    Assemble the Poutine

    Once the brisket is done, remove it from the pot and shred it with two forks. Serve the fries topped with shredded brisket, ladle beef au jus over the top, and sprinkle with melted mozzarella cheese. Garnish with fresh parsley.
