    Prepare the Ingredients

    Chop the onion, carrots, and celery into bite-sized pieces. Mince the garlic.

    Sear the Brisket

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the brisket with salt and pepper, then sear it on all sides until browned. Remove the brisket and set aside.

    Sauté the Vegetables

    In the same pot, add the onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.

    Add Liquid and Simmer

    If using, pour in the red wine and scrape up any browned bits from the bottom of the pot. Then add the beef broth, bay leaves, and thyme. Bring to a boil.

    Braise the Brisket

    Return the brisket to the pot, submerging it in the liquid. Reduce heat to low, cover, and let it simmer for about 3 hours, or until the meat is fork-tender.

    Rest and Slice

    Remove the brisket from the pot and let it rest for 15 minutes before slicing. Serve with the braising liquid and vegetables.
