Toffee Cake

Preparation

    Preheat Oven

    Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

    Mix Wet Ingredients

    In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

    Combine Dry Ingredients

    In another bowl, whisk together the flour, baking powder, and toffee bits.

    Combine Mixtures

    Gradually add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.

    Bake

    Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

    Cool Cakes

    Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

    Prepare Frosting

    While the cakes cool, beat together 1 cup of unsalted butter, 4 cups of powdered sugar, 1/2 cup of heavy cream, and 1 tsp of vanilla extract until fluffy and smooth.

    Assemble Cake

    Once the cakes are completely cool, place one layer on a serving plate, spread a layer of frosting on top, and then place the second layer on top. Frost the top and sides of the cake.

    Garnish

    Sprinkle additional toffee bits and chocolate shavings on top for garnish.
