    Prepare the Pickled Okra

    In a saucepan, combine sliced okra, vinegar, and salt to taste. Bring to a simmer and cook for 5 minutes. Remove from heat and let cool.

    Cook the Grits

    In a pot, bring water to a boil. Slowly whisk in the grits and reduce to a simmer. Cook for about 20 minutes, stirring frequently. When thickened, stir in the shredded cheddar cheese until melted and creamy.

    Blacken the Catfish

    Pat the catfish fillets dry and coat both sides with blackening seasoning. In a skillet, heat olive oil over medium-high heat. Add the catfish and cook for 4-5 minutes on each side until blackened and cooked through.

    Brown the Butter

    In a separate small pan, melt the butter over medium heat. Let it cook until it turns golden brown and has a nutty aroma. Be careful not to burn it.

    Serve

    On a plate, serve a generous scoop of cheddar grits topped with a piece of blackened catfish. Drizzle with brown butter and top with pickled okra salad.
